INFORMATION

 

Contract packaging is the providing of facilities and services to develop, test, process and package food products. The services offered vary according to your needs as the customer. We can provide you with any or all of the following if you desire.  Product development, recipe testing, cost analysis, consultation, nutritional paneling, food processing and packaging.

 

We are a certified processing facility and are inspected by the FDA and the USDA. Our managers are FDA certified food manufactures. With our current equipment we produce two types of foods, "Low Acid Foods", and "Acidified Foods". Under current USDA food regulations, Acidified foods are "low acid foods to which acid(s) or acid food(s) are added".

Acidified foods must have a pH value of 4.6 or less in their finished form.

They should be heated to the minimum temperature, and time specified by the scheduled process. Usually products are filled at a temperature of 180F.

We DO NOT have the facilities to process products with meat content higher than 5%.

The amount of acidification, and type of process used depends mainly on the ingredients used in the recipe, and their base pH value.

 

We currently have filling capabilities from 4oz. up to 55 gallon. This depends on the density of the product. We will discuss your container and if its one we can fill and label.

 

If we are going to apply labels they should be on die cut, roll stock, paper, and rolled in position four. Odd shape containers may require hand labeling which will increase your labor costs. General guidelines for labeling and the specific regulations are provided in another hand out.

 

Recipe confidentiality is guaranteed in writing. When shared with us you must be in a 1 or 5 gallon batch size. We will then scale it up to match the amount you want produced, (allowing for minimum run size). Recipes should be typed, stating wet or dry on the measurements (i.e. 16 oz. wet or fluid or dry). Clear methods of production, how you prepare this product, what's added first, mixing, cooking times etc. A Process Authority must test your product before we can mass-produce the item. We recommend that you send two samples with a copy of the ingredient statement to:

Your samples must be home canned or we can do it for you in our test kitchen so that a Recommended Process Schedule will tell us how to properly handle your product. This can take up to 3 weeks.

 

Test runs are required for first time processes. We will produce a 5-gallon batch in your presence (required) and bottle the product at that time. This is for your protection. We will be looking for flavor, color, and the consistency that you expect of the product.
